SHTS organizes International Virtual Session on Food Safety Standards In The Middle East!
International Food Safety Standard (IFSS) is one of most important topics and of paramount importance for Culinary students. We, at D.Y.Patil University School of Hospitality & Tourism Studies organizedthe first ever International Virtual Session on IFSS from one of the leading hotels in food safety in the World – Shangri-la Hotels. The speaker Mr. Roshan Singh Negi is aHygiene Manager at Shangri -la Doha and has an experience of around 13 years in this position. The session was organized by Assistant Professor Mrs. Vanitha Sridhar for 60 first year Culinary Students on the 28th of Feb 2019.
The session started with the introduction of the speaker and the students. The speaker started with discussing ISO22000:2005 and HACCP certification and also Shangri-La ‘s own food safety system called Shangri-La Food Safety (SFS). He elaborated the standards which includes safe procedures for each process such as receiving, re-packing, food storage, preparation and cooking, cooling and re-heating, displaying products, handling products when serving guest, packaging, cleaning and sanitizing, pest control, transport and delivery.
The emphasis on the below points were done as they are the most crucial points internationally.
Yearly medical checkups as per Local municipality health regulation.
Extensive food safety training for all the food handlers, 16 hrs. training for all the new joiners and 8 hrs. yearly refresher training.
All the food and beverage suppliers undergo pre-audit before supply and high-risk food supplier undergo yearly audits.
